Preheat waffle iron to medium heat.

Mix the parmesan into the breadcrumbs.

Coat eggplant slices in flour, then egg, then breadcrumb mixture.

Coat waffle iron with non stick spray and add one slice of eggplant in each quadrant of the waffle iron.

Cook for about 3 minutes, until eggplant slices are golden brown and tender.

Serve warm with marinara sauce.
