PREPARATION


For the sauce: Whisk together all ingredients and set sauce aside


Filling and Assembling:


Add cauliflower to food processor and process to resemble rice


To a hot skillet add olive oil and cauliflower, brown for 2-3 min, stirring constantly


Add bell peppers, celery, mushrooms and green onions Cook for 3 min.


Add water chestnuts, garlic, pepper, salt and ginger.


Cook for 1 minute  or more depending on desired crunch


Stir in the sauce, mix and add to bowl


Spoon the mixture onto lettuce leaves


Top with peanuts and drizzle with the sauce. Serve and enjoy
