PREPARATION


Heat a large skillet to medium high heat. Spray with non stick spray and saute sweet potatoes until tender.


Set aside and let cool.


In a large bowl, whisk egg and spices.


Add cooled potatoes and combine to coat.


Heat waffle iron to medium heat and coat with non stick spray


Layer half of the potato mixture onto the iron and cook for 3-4 minutes, until brown and crispy.


Serve on a warmed plate.
