PREPARATION


Squeeze spinach in paper towel to absorb any water. Chop spinach


In a bowl, add spinach, green onions, olive oil, herbs and pepper. Mix well


Add feta cheese. Mix


Cut chicken breast through the side but not all the way through. Flatten the chicken breast


Stuff each chicken breast with spinach/feta mixture.


Wrap each breast with 1-2 slices of prosciutto making sure the pocket opening is well covered.


On parchment lined baking sheet, place the stuffed chicken breasts with seam sides down


Bake at 350 degrees for 20-25 minutes, depending on thickness of chicken breast.


Bake until chicken is cooked and ham is crispy.


Serve with steamed broccoli. Enjoy
