PREPARATION


Purée strawberries in a blender, if needed add water 1 tsp at a time using as little as possible


Mix cream cheese, yogurt, milk and sifted icing sugar in the bowl of a stand mixer. Blend on high 3-5 minutes until completely smooth. *Alternatively, you can use a hand mixer.


Slowly add strawberry purée into cream cheese mixture to fully combine OR hand stir with spatula to have a swirled effect. Reserve 2 Tbsp purée to make 2nd set of ice cream popsicles seen in video! If not, you can add all purée into cream cheese mixture.


Pour into popsicle molds and freeze 6+ hours.

To make an easy set of popsicles, simply pour strawberry purée evenly into popsicle molds and top with softened strawberry ice cream, continuing with next steps.


For Strawberry Shortcake Topping, melt butter and toss with crushed shortbread cookies. Pour onto parchment or onto a baking sheet.


Remove popsicles from freezer for one minute and then press popsicles  gently into topping to coat both sides.


Lay flat on baking sheet or plate and refreeze for 6+ hours.
