Bring steaks out of the fridge 20 minutes prior to grilling to bring close to room temperature. Marinate for that time in lime juice and olive oil.
Combine fresh parsley, garlic, onion, oregano, olive oil and lime juice in a blender or food processor. Combine to make chimichurri sauce.
Place steak on preheated grill and grill to your liking.
*For this video, we cut our sirloin in half grilling one half as a steak to be sliced post grilling, resulting in a more rare steak. You can also thinly slice your sirloin and cook for a more medium-well done steak.
To assemble tacos, lay steak on taco shell. Layer with tomatoes, avocado and lettuce. Drizzle with fresh chimichurri sauce and enjoy!
