PREPARATION


Squeeze spinach on paper towel, chop coarsely and set aside


Into bowl add panko crumbs, herbs, eggs, garlic powder


Add chopped drained spinach, green onions and Parmesan cheese


Salt and pepper (to taste)


Mix. If mixture is too moist, add more panko crumbs


Form into 1-2” balls with your hands or an ice cream scoop or form into patties; add sesame seeds for crunch


Place on parchment covered baking sheet


Bake at 350° for 20 minutes, until golden


Rest on baking sheet for 5 min. Serve and enjoy


 

Tip: Can be frozen (baked or unbaked. Remove from freezer, let sit for ½ hour before baking. Previously baked: Reheat at 350 ° for 10 min. Unbaked: Bake at 350° for 20 min.
