PREPARATION


In a large skillet, heat olive oil and sauté onion on medium high heat for 3 minutes until translucent.


Add turkey and spices and cook until meat is browned.


In crockpot, add turkey mixture, tomatoes, peppers, beans, and chicken stock.


Mix and cook covered on low for 6 hours or high for 4 hours.


Serve with your favorite toppings and grilled tortilla.


NOMNOMCHEF TIP:

You can use any stock you happen to have on hand as well as kidney beans instead of black beans. If you don’t have canned diced tomatoes, you can of course use fresh tomatoes or a small can of tomato paste. The paste adds a deeper tomato flavor. This dish is very flexible.
