PREPARATION

Mix spices together and rub on pork


Place Coca Cola and Molasses in slow cooker and gently whisk to combine


Place pork in slow cooker on low for 8 hours


Remove to plate or cutting board and let sit while you make the glaze


For Glaze:

Combine all ingredients in a sauce pan over medium low heat and bring to a boil whisking occasionally. Sauce will thicken quickly. Remove from heat


For Coleslaw:

Chop or shred cabbage to desired size


Shred carrot


Combine with ½ cup prepared coleslaw dressing


To assemble Pulled Pork Tacos:

Shred pork with 2 forks and place pork and coleslaw on a tortilla shell


Drizzle with balsamic glaze


TIME TO MAKE 20 minutes total prep time, plus 8 hours for slow cooking

SERVES 4-6 large dinner servings using large tortillas, 12-18 appetizer servings using small tortillas
