PREPARATION


Mix all fruit and veggies in a bowl.


Drizzle with olive oil, lime juice and salt to taste.


Can be refrigerated for flavours to combine further, or enjoyed immediately!


I used 2 firm and 2 ripe peaches to combine the different flavors and textures. You can use any combination of firm to ripe peaches of your choice. The more ripe the peach, the juicier your salsa will be if you do not adjust the oil and lime juice.

**Boiling the peaches for 30 seconds, or until the skin splits can make them easier to peel by hand. You can also simply peel with a peeler or knife without boiling.

MAKES approximately 2 cups of salsa
