PREPARATION


Peel 4 bananas and mash with a fork.


In a mixing bowl, add in bananas, melted salted butter, dark brown sugar and one whisked egg and stir to combine.


Add in rum or vanilla, baking soda, cinnamon and a pinch of salt. Mix in flour and stir.


Pour mixture into buttered pans and smooth out.


Sprinkle with coconut and bake at 350 for 50-60 minutes.


Let cool and slice.
