Heat oil in pan over medium heat

Sauté onions until golden

Add rice and cook till lightly golden

(This gives the nutty flavor to the rice)

Stir in coconut, stir constantly for 1 minute to enhance coconut flavor

Add cooked chicken, peppers and green onions

Add sesame seed oil

Salt and Pepper (to taste)

Spoon ingredients into rice cooker

Pour in water or broth into rice cooker and stir well

Timer set to “rice”. Depending on the type of rice cooker, the cook time will be between 35-45 min.


Tip: Dish can be reheated and is just as delicious the next day.
