1 Cup Icing Sugar, sifted

2-3 Tbsp. Fresh Lemon Juice*

The more Lemon Juice you use, the thinner your glaze will be for drizzling. The less you use, the glaze will become spreadable. This is up to you!


Preheat oven to 350F.

Whisk flour, baking powder, baking soda, and salt in a bowl. Set aside.

In a separate bowl, whisk together sour cream, buttermilk and fresh lemon juice. Set aside.

In the bowl of a stand mixer *or a bowl that you will use a hand mixer in, beat the sugar and lemon zest until butter is creamy.

Add eggs and mix to combine. Stir in dry ingredients. Once fully combined, stir in sour cream mixture. Stir in poppy seeds.

Spray muffin pan and fill with muffin batter.

Bake for 20 minutes.

While baking, combine ingredients for glaze. Drizzle over slightly cooled muffins. Serve and enjoy!
