PREPARATION


Preheat oven to 350F.


Cook lasagna noodles according to package directions for al dente pasta. Lay cooked noodles in a single layer on parchment paper or cutting board(s).


To make the filling, combine the ricotta cheese, cottage cheese and egg whites. Add the parmesan cheese and then mozzarella cheese and mix to combine.


Season with pepper, to taste. As mozzarella is a salty cheese you will likely not need to add salt.


Evenly spread cheese mixture across lasagna noodles from one end to the other.


Lay tomato slices, evenly spaced along cheese mixture. Sprinkle with diced sun dried tomatoes, if using, and fresh basil.


Roll each lasagna noodle tightly, keeping seam side down.


Cover bottom of baking dish with sauce. Place lasagna rolls in dish.


Add remainder of spaghetti sauce to tops of roll ups and cover with shredded mozzarella cheese.


Bake in preheated oven for 30-40 minutes.


Serve with more fresh basil and Parmesan cheese!
