PREPARATION


Remove sausage from casings


Heat 2 Tbps olive oil in skillet, add sausage, crumble and cook through


Remove cooked sausage to plate


Add 1 cup sliced onions to drippings in skillet and caramelize


Once golden, 3-5 minutes, season with salt and pepper


Add both sliced red and yellow peppers and sauté until tender


Add minced garlic to skillet and allow to sauté 1-2 minutes, then add wine


Add tomatoes, with their juice, and sausage back to skillet; simmer for 3-5 minutes


Place cooked Pappardelle noodles over sauce in skillet, toss to combine and drizzle with remaining 2 Tbsp olive oil


Garnish with fresh parsley, basil and freshly ground pepper
