PREPARATION


Preheat oven to 400F


Cut the orange into 8 pieces, leaving rind on the orange. Place the orange, orange juice, melted butter, egg and chopped dates into the blender. Blend 2-3 minutes until well blended.


Whisk flours, baking soda, baking powder and brown sugar in a large bowl.


Add the blended ingredients to the dry ingredients and mix to combine.


Place batter into greased muffin tins. Will make 24 mini muffins or 12 full size muffins.


Bake 15-17 minutes.
