PREPARATION


Crush garlic with 1 tbs of salt and add to a mixing bowl.


Mince anchovies with a sharp knife and add to the bowl.


Then add the mustard, vinegar, lemon juice and eggs.


Whisk until smooth and slowly add the oil.


Keep adding the oil slowly until the dressing is thick like mayonnaise.


If too thick add a tbs of warm water.


Add chopped parsley and serve.


Tip (You can also make this dressing in a blender as long as you are careful not to over thicken the dressing or it can curdle).
