PREPARATION


Preheat oven to 375F.


Mix coconut and flour together.


Add condensed milk, pinch of salt and vanilla. Stir until well to combine.


Add condensed milk 1 tablespoon at a time, if needed, until mixture sticks together.


Measure 1 Tablespoon of cookie dough and roll into a ball. Space out evenly on parchment lined baking sheet.  Flatten cookies with fingers.


Bake in preheated oven 10-12 minutes until slightly browned.


Cool cookies either on counter or in refrigerator to speed up cooling time.


Place chocolate in the top of a double boiler to melt. Dip half of each cookie into chocolate. Return to cookie sheet and allow to chill until chocolate has hardened.
