PREPARATION


Preheat oven to 350F


Coat your loaf pan(s) with non stick spray or butter.


Whisk eggs, milk, rum (or vanilla)  and lime zest in a bowl. Set aside.


In a larger bowl, combine flour, coconut, sugar, baking powder and salt. Mix to combine. If using a stand mixer, start the mixer on low and slowly add egg mixture until  just combined.


Add melted butter and mix on low again until just combined being sure not to overmix.


Pour batter into pan(s) and bake  45 minutes for small/mini loaf pans and 60-70 minutes for standard loaf pan.


Allow loaf to cool in pan for 10 minutes and then turn out onto wire rack to cool completely.


While loaf is cooling, combine ingredients for lime glaze in a small bowl.


Drizzle glaze over loaf and sprinkle with additional lime zest if desired.
