PREPARATION
Cut up cauliflower into small florets. In your steamer, bring pot of water to boiling point; add cauliflower and steam till tender. (Approx. 15-20 min)
Cool. Add cooled steamed cauliflower to food processor. Puree breaking up pieces.
Add broth of your choice, nutritional yeast, seasonings, basil and puree again till smooth.
Pour into bowl; ready to top or add to favorite dish like pasta.
Can be reheated, adding more broth or water if too thick.
NOMNOMCHEF TIP:
Orange cauliflower (usually available in the fall) produces a different color and creamier with a more sugary taste. Using more nutritional yeast also gives it more of a cheesy flavor. Use this healthy version on pasta, steamed vegetables, baked potatoes, polenta, chicken, eggs, add to soups or with tortilla chips (add more pureed cauliflower to thicken sauce.)
